Hello and happy Monday! I hope you all had a wonderful weekend. Mine was a little crazy but really fun. Here are some things that happened.
I made my first visit to the Sunshine Stand! My friends Meagan and Erin started a juice stand and are going to be hanging out weekly at a couple different farmer’s markets. I had the Captain Planet, which (I think) was cucumber, pear, spinach, mint, and ginger. It was absolutely perfect for a sunny Friday lunch break.
Apple slices + Justin’s chocolate hazelnut butter = favorite snack of all time.
I got a new camera! I’ve been looking for the battery charger for my old point-and-shoot for a while, and I finally resigned myself to the fact that it is gone forever. So Saturday I went with two of my best friends to Sam’s Club and bought myself this Nikon Coolpix (the trip to Sam’s was another story…I might have gotten super tired and thrown a tantrum).
I made my first batch of overnight oats! I used this recipe from Julie, let it sit in the fridge overnight, and topped it with a sliced banana in the morning. I think I need to work a bit on my measurements. I’ve heard from several people that you need to find what works for you, because consistency is key. I’m going to play around with them over the next few weeks and see how they turn out. One thing I definitely noticed is how FILLING they are! I seriously didn’t even think about food until at least 5 hours later…and this is coming from a girl who loves to snack.
Since Saturday was so super busy, I tried my best to balance relaxing and being productive on Sunday. Dora got a good brushing (you can tell from the photo that she is soooooo excited), I went to the grocery, cleaned, and then watched some more of The Mindy Project. Perfect day.
