Welcome to week 2 of What I Ate Wednesday! The takeaway from here is that it’s hard to remember to take photos of everything you eat over the weekend. I’m trying. So I’ve warned you, there are some photos missing from this post, but we will proceed anyway.
(This is from Saturday, April 27.)
I slept in super late Saturday. Luckily, I didn’t really have plans, so I didn’t feel that guilty. My first intention for the day was to go to the Y and do some intervals on the treadmill (spoiler: This never happened. I tried 3 separate times, but the gym was packed. If there’s one thing I hate, it’s a busy gym.)
For breakfast/brunch, I made another egg sandwich—whole wheat English muffin, 2 eggs, and some strawberry jam.
Since it was almost noon, I was still pretty hungry after this, so I ate a spoonful of peanut butter for some extra protein.
After this, I got to work on decorating the apartment (one of my goals!). I’ll try to get some pictures this week to post, but I really love it. My place feels so homey now! I also ran some errands and stopped by the library to pick up a few things. Saturday was a gray day, and it was around 3:00, so I felt this was the appropriate time to lay on the couch and watch a movie (Peep World. Really good!). I also decided to grab some lunch. I made a Mexican lasagna earlier in the day that rocked—I’ll post the recipe soon. For some dessert, I had an apple with peanut butter and chocolate chips.
Lots of peanut butter. All day, every day.
That evening I went to a friend’s apartment-warming party, where spaghetti and breadsticks from Olive Garden were served, along with salad, brownies, beer, and wine. I have no photos of any of this. We’ll try again next weekend.
